We continue our mandarin recipes. It is all open season now. Today our recipe takes us back to the very first Mandarin Festival Recipe Contest. Way back when the festival was still heal in Downtown Newcastle. Leta Gardner was our first Grand Prize Winner.

Shrimp over Pasta

  • 1 pound pasta cooked al dente
  • 2 cloves fresh garlic, minced
  • ½ cup white onion, sliced thinly
  • 2 tablespoons olive oil
  • ½ pound fresh shrimp, uncooked, medium-size
  • 1 tablespoon fresh lemon juice
  • ½ cup red bell peppers, sliced
  • ½ cup green bell peppers, sliced
  • 1 cup sliced mushrooms
  • 6 mandarin oranges, peeled and segment
  • ¾ cup white wine
  • ¼ cup Parmesan cheese, grated
  • ¼ cup feta cheese, crumbled
  • 2 tablespoons chopped parsley


Saute garlic and onions in olive oil for 1 minute. Add shrimp, cook until just pink. Add lemon juice, peppers and mushrooms. Cook until the vegetables are just cooked and tender. Add wine, continue to cook 1 minute. Remove from heat, Stir in fresh mandarin orange segments. Immediately pour over pasta. Top with cheese and parsley.
