Parmesan flavors chicken repertoire

At our house, it's not usually a question of what do you want for dinner, but rather, how do you want your chicken? We eat chicken so often I'm beginning to think we should open a chicken farm! While one family member won't eat beef, another refuses pork, a third doesn't care for fish and two won't touch lamb. My husband loves the wild meats like antelope and elk, but they are too gamey for me. So, in the end, we normally resort back to chicken and the question is: How many ways can one prepare chicken? Every week we try to create a new chicken dish and here is another very simple recipe that can be prepared in 20 minutes or less and has only four ingredients ” chicken, olive oil, bread crumbs and Parmesan cheese. n Crusty Parmesan Chicken (Serves 4) Ingredients 6 boneless, skinless chicken breasts 1 cup bread crumbs (for homemade breadcrumbs, toast bread and process it for about one minute) 1 cup grated Parmesan cheese ¼ cup olive oil, or canola oil Directions Cut chicken breasts in half lengthwise, like you are filleting them. Place halves, three or four at a time, in a large Ziploc baggie and pound with a meat pounder until slightly flattened. Mix bread crumbs and Parmesan cheese in a medium-size bowl. Preheat electric skillet or stovetop burner to medium high and heat 1-2 tablespoons oil. Dredge pounded chicken fillets in breadcrumb mixture on both sides Place breaded chicken breast in pan and cook until browned on both sides, adding oil as needed. Cover skillet and continue to cook over low heat for another five minutes or until chicken is completely cooked through. Remove chicken breasts from pan and serve. Scrape up any browned bits from the pan and sprinkle on top of chicken. Serve with rice or potatoes and crunchy bread. Susie can be reached at suziven@hughes.net
